Curried Chicken Salad on Pita

1 tbsp (15 mL)      light mayonnaise

2 tbsp (25 mL)      plain yogurt

½ tsp (2 mL)         curry powder

%u2154 cup (150 mL)     finely chopped cooked chicken or turkey, about 3 oz (80g)

3                           green onions, thinly sliced

                             salt and ground black pepper

4 leaves                romaine lettuce, thinly sliced

2                           pita breads, (about 6 in/15 cm diameter)


In a small bowl, stir together mayonnaise, yogurt and curry powder. Mix in chicken, onions, and salt and pepper to taste.


Cut pitas in half. Using a knife, separate each half to form a pocket. Place a quarter of the lettuce into each pita half and top with a quarter of the chicken mixture.
