Fresh Fruit Muffins

1½ cups (375 mL)          whole wheat flour

1 tsp (5 mL)                    cinnamon

1 tsp (5 mL)                    baking powder

1 tsp (5 mL)                    baking soda

%u2153 cup (75 mL)                sugar

1                                    fresh orange

1                                    fresh apple

½ cup (125 mL)              raisins

½ cup (125 mL)              plain yogurt or buttermilk

1                                    egg

½ cup (125 mL)              soft margarine or vegetable oil


Combine the flour, cinnamon, baking powder, baking soda and sugar in a mixing bowl.


Cut the unpeeled well-washed orange and apple into sections, discarding only orange seeds and apple core. Place in blender with raisins, yogurt or buttermilk, and egg. Blend at least 60 seconds until the mixture is pureed. Add margarine or oil; combine.


Pour fruit mixture onto dry ingredients. Stir just enough to combine. Spoon batter into muffin tins that have been greased or lined with paper liners.


Bake at 400°F (200°C) 13-15 minutes for medium, 18-20 minutes for large.
