Sauté chopped onion, sweet peppers, baby zucchini, whatever similar vegetable you like, lightly. Grate a little melting cheese- Monterey jack or cheddar. Shred or mince a little cooked chicken or meat if desired. Spray the bottom of a frying pan with cooking oil, and heat over medium heat. Place a flour tortilla in the pan. Sprinkle a little of all the ingredients – sautéed vegetables, cheese, shredded meat – over half of the tortilla, and fold the other half over it to make a half circle. Grill on one side until lightly browned, turn over and cook until cheese melts and surface browns.
