Favourite Christmas Recipe from Government House

Government House Fruitcake

provided by Their Honours, the Honourable H. Frank Lewis and Mrs. Dorothy Lewis

Ingredients

5 cups flour
2 tsp. baking soda
1 tsp. each of cinnamon, nutmeg and ginger
½ tsp. ground cloves
2 jars (1500 ml or 1.5 L) mincemeat
2 cups glazed cherries
2 cups mixed peel
2 cans of condensed milk
2 tsp. lemon extract or 2 tsp. vanilla

To prepare, mix flour, soda and spices together.  Mix fruit, condensed milk, extracts together, and fold into your dry ingredients.
 
Grease loaf pan of choice and bake at 350 degrees until the cakes are done; a toothpick inserted into the middle should come out clean.

Makes three loaf pans.
